Recipe for broccoli and cauliflower au gratin

Ingredients


Broccoli (frozen) 6½ oz 
Cauliflower (frozen) 6½ oz
Cheese (grated) 1½ oz
Flour 1¼ oz
Margarine 1¼ oz
Milk powder ½ oz

Serves four persons.

Method

  • Place the florets into saucepans of boiling water, bring
    back to the boil and simmer for 10 minutes
  • Drain very thoroughly the florets and put into a warmed tin
  • Melt the margarine, add the flour and cook to a sandy
    texture
  • Blend the milk powder to water and add to the roux
  • Whisk to a smooth consistency and add half the cheese
    and cook for 10 minutes
  • Pour the cheese sauce over the cauliflower and broccoli
  • Sprinkle with the remaining cheese
  • Oven bake for 10 -15 minutes until golden in colour
  • Garnish
