Recipe for beetroot cake

Ingredients:

Grated beetroot 2 oz

Milk 1 tblsp

Vegetable oil 2½ fl oz

Flour 3oz

Golden caster sugar 3½ oz ginger ½ tsp

Eggs 1 large cinnamon ½ tsp

 

Serves four persons.

 

Method:

  • Whisk oil and sugar together
  • Whisk in egg yolks and milk
  • Fold in beetroot
  • Fold in spices and flour
  • Whisk egg whites until stiff
  • Fold into mixture
  • Bake for approx 35 minutes or until cooked at electric 350º/gas mark 4
