Ingredients:
Grated beetroot 2 oz
Milk 1 tblsp
Vegetable oil 2½ fl oz
Flour 3oz
Golden caster sugar 3½ oz ginger ½ tsp
Eggs 1 large cinnamon ½ tsp
Serves four persons.
Method:
- Whisk oil and sugar together
- Whisk in egg yolks and milk
- Fold in beetroot
- Fold in spices and flour
- Whisk egg whites until stiff
- Fold into mixture
- Bake for approx 35 minutes or until cooked at electric 350º/gas mark 4
